1. Vegetarian Quesadillas
Quesadillas are one of my favorite things to eat ever, and these vegetarian quesadillas are absolutely amazing for dinner. Made with veggies like zucchini, bell peppers and sweet potato, these quesadillas are the perfect healthy dinner meal.
Also, this meal is vegetarian and can be adapted to be vegan and gluten free!
2. Italian Baked Beans & Greens
Italian is probably my favorite cuisine, so you know I had to include a couple of Italian recipes on this list.(BTW, all of these recipes are found on the website Feasting At Home, and I have to say that they are amazing)!
This meal, baked in the oven until it’s golden and bubbling, consists of green beans, kale, and homemade(or store bought) marinara sauce and is seriously delicious!
I would consider this meal a mash up of eggplant parmesan and lasagna, two of my favorite Italian meals. This meal is delicious without compromising on the health factor.

4. Pad Thai
This is probably one of the easiest dinner recipes I could ever give you. This recipe can be made with chicken, shrimp, or tofu, so no matter your diet, you can eat it.

5. Roasted Butternut Enchiladas
As you can tell, I’m a big fan of Mexican food 🙂 These butternut squash enchiladas are absolutely delicious with mole sauce.
